Here Is A Wonderful Summertime Lunch

Today has been a lovely day. I worked out and walked 3 miles on the treadmill. We stopped at our produce market and got some corn, tomatoes, and peaches. We came home and made lunch. So Yummy~1/2 a cantaloupe for each of us, with the seeds scooped out and cottage cheese put in along with some blueberries. Then a salad of greens with tomatoes, some strawberries, and a peach. I chopped up some leftover turkey breast to boost the protein a bit. What a satisfying lunch. Take a look! Of course one of my kitties HAD to hop up on the table just as I shot the picture :-).

A little lesson planning for my students is on the docket for today—and some reading. The sun is shining in my corner of the world and it is supposed to be 113 degrees Fahrenheit before the day is through. So I will be staying indoors for awhile. Laundry will have to wait because I need to focus on my students. I am a bit nervous about some of the courses I am tutoring this year. But that always happens with the onset of a new year. I hope your day is going well~may God’s peace and joy reign in your heart today and always.

    I’m ready for a day and a lunch like that Kate. Motivation is lacking for the walk and unreasonable hunger is calling me to the cookies. You may be just the inspiration I need to reverse this downhill trend. Will get up right now and hit the treadmill! Thanks. 🙂

      You too, Gilly! I have also done the melon and just filled it up with berries. But I really needed the protein, too. Now, a friend of mine has tried a scoop of ice cream topped with berries in her melon. Yummy, right?
