Today has been a lovely day. I worked out and walked 3 miles on the treadmill. We stopped at our produce market and got some corn, tomatoes, and peaches. We came home and made lunch. So Yummy~1/2 a cantaloupe for each of us, with the seeds scooped out and cottage cheese put in along with some blueberries. Then a salad of greens with tomatoes, some strawberries, and a peach. I chopped up some leftover turkey breast to boost the protein a bit. What a satisfying lunch. Take a look! Of course one of my kitties HAD to hop up on the table just as I shot the picture :-).
A little lesson planning for my students is on the docket for today—and some reading. The sun is shining in my corner of the world and it is supposed to be 113 degrees Fahrenheit before the day is through. So I will be staying indoors for awhile. Laundry will have to wait because I need to focus on my students. I am a bit nervous about some of the courses I am tutoring this year. But that always happens with the onset of a new year. I hope your day is going well~may God’s peace and joy reign in your heart today and always.
Yummy!
it was delicious!
Too sweet for my blood, athough I would love it and suffer later! 😉
oooh too much fruit, eh? Maybe that’s why i am craving fruit these days—replacing cookies and candy!
I’m ready for a day and a lunch like that Kate. Motivation is lacking for the walk and unreasonable hunger is calling me to the cookies. You may be just the inspiration I need to reverse this downhill trend. Will get up right now and hit the treadmill! Thanks. 🙂
oh the cookies are SOOOO hard to resist. You can do it Dor!
That looks pretty tasty!
Cats have an unbelievable ability to get in a picture just as you snap it! 😉
Oh it was really scrumptious! and you are right–cats do that! They think they are always the stars!
My kind of summer lunch. I love cottage cheese.
BE ENCOURAGED! BE BLESSED!
it is such a yummy contrast to the cantaloupe and blueberries, too!!
I’m so hungry, I’d eat the plate too! You’ll be fine with the students and courses, Kate–God bless y’all Big–love, sis Caddo
Thanks Caddo—i hope so! I have been craving carbs tonight for some reason—-i may need to make some bean soup tomorrow. Come on over for produce and soup—or maybe some fish….it would be fun, come join us! God bless you sweet lovely Caddo–love, sis Kate
How interesting, Kate–I was feeling like making chili! And I was craving fish yesterday–yep, I’ll be over–hope you have lots! Oh, and I was looking up recipes for potato and mozzarella–plenty of carbs there, eh? I did find one that sounds super good, if you’d like it I’ll email it to you! love you lots, sis Caddo
oooh that sounds super yummy!!!! yes, email it to me…..there ARE days when i think melted cheese may be my alternate middle name 😉
Looks gorgeous, I wouldn’t have thought of cottage cheese with the melon. Have a great day!
You too, Gilly! I have also done the melon and just filled it up with berries. But I really needed the protein, too. Now, a friend of mine has tried a scoop of ice cream topped with berries in her melon. Yummy, right?
That’s a beautiful lunch! And I notice a really good eye for portion control! I’m sure you’re feeling better for all of your efforts. You’re doing good job…and you’ll be a better tutor, too, I think, just based on feeling better! 🙂 Debra
Thanks Debra~the portion control is already beginning to be almost automatic. 15 lbs gone. It’s a really good start===and I am feeling much, much better. Thanks 🙂 Kate
