Ok I am on the run way too much these days. So I am going to try a new soup recipe! Hope it tastes good. Let me know if you try it!
Ingredients (feel free to substitute liberally!)
A leek and an onion (or 2 leeks or 2 onions)–chopped and sautéed in olive oil or the fat of your choice
close to a quart of broth of your choice
a couple of cups of chopped broccoli–or do carrots or celery–or whatever. Grab some veggies!
sweet potatoes–if you have the huge ones maybe two–maybe 3— Peel them and chop them up. You want about 4 cups maybe a bit more.
chop up an apple (toss in some pear too if you feel like it)
Top the bowls of soup with goat cheese or sour cream or even plain yogurt or parmesan cheese if you want!
Saute the onions and leeks. Now you can throw everything in the crock pot if you want. Or you can throw all but the broccoli and veggies in a soup pot and simmer for about a half hour or so. This is a lot like my potato soup, so here is what I suggest. If doing stove top, keep an eye on it and stir regularly so the bottom doesn’t scorch. After about 20 min, try taking a whisk to break up the chunks and make the soup smooth. Some people would toss it in a food processor or blender to make it super smooth. As far as I am concerned that is way too much labor for soup! I just use a whisk!
What I plan to do is toss it in the crock pot for the day on low….maybe for about 6-8 hours? I should be able to whisk it fine then. What I may do is toss the veggies in after I whisk it and let it simmer in the crock pot another 10 min.
What I am trying to say is if you want a smooth soup with the veggies looking all pretty, whisk the heck out of the soup, and microwave the veggies and toss them in at the end. If you like the stew or chunky look, skip the whisk, and put the veggies in at beginning or end. Put the fruit in at the beginning.
