Vegan Banana Bread

Easy Vegan Banana Bread

What You Need

  • 4 very ripe bananas (the more brown the better)
  • 1 1/2 cups whole wheat flour
  • 1/3 cup Earth Balance, melted
  • 1/4 cup applesauce
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda

Preheat oven to 350 F. Mash bananas in a large bowl. Add melted butter and mix. Add applesauce, vanilla, sugar, salt; mix to combine. Add flour and baking soda and stir just until ingredients are combined. Pour into a greased loaf pan. Bake uncovered for about 15 minutes. Cover with foil and bake for another 30 minutes or so, or until a toothpick inserted into the center comes out clean. Let cool a few minutes in pan and transfer to a plate or wire rack.

  1. This sounds wonderful! And so few ingredients, it would be a convenient banana bread, too! I always have a few that ripened a little too quickly! 🙂 Blessings, Kate.
