It’s Root Vegetable Month: and another sketch for you

Did you know that it is Root Vegetable Month? What? How could you not know? We have been eating a wider variety of vegetables at my home. I tend to be a little repetitive in my cooking and meal preparation. Perhaps because I wore uniforms to elementary school I tend to be quite comfortable wearing the same things. Meals are the same thing. My wise husband needs more variety in his foods. When we were first married I think I made macaroni and cheese every night (or almost every night) for weeks. In my mind we had variety because some nights it was elbow noodles, sometimes squiggly, sometimes shells, and sometimes ziti. Ha! He didn’t call that variety. The same thing had happened with vegetables. Lots of lettuces, spinach, broccoli, and green beans. So he thought it would be good to branch out and add some kale, chard, squashes, beets, brussel sprouts…..So we did. In the past week we have had summer squashes, beets, spaghetti squash, cauliflower, brussel sprouts, red peppers, and mushrooms.

Then I read yesterday that December is Root Vegetable Month. Well, aren’t we the clever, hip family! That is my motivation for posting the charcoal sketch I drew of some squashes. Don’t they look pretty? So don’t squash your enthusiasm, pumpkin! BEET the rush. It’s vegetable time!!! …and in keeping with the root vegetable theme, i guess we had better have carrot cake for dessert, right? Happy, happy Saturday…
